So! You have been diagnosed with Diabetes or Celiac Disease or Irritable Bowel Syndrome (IBS), or non-Celiac gluten sensitivity? Regardless, you have been told that your lifestyle — especially your eating habits — have to change.
Our society is so focussed on food that, when we are told or even decide voluntarily that we have to change what we eat, to some degree or other, we experience the five stages of grief: Denial, Anger, Bargaining, Depression and Acceptance. Society does not help. Even those who are trying to be helpful are confused. “Why can you not have this piece of cake? It is so good.” “One cookie won’t hurt you. I made them especially for you.” If you have Celiac Disease (or non-Celiac gluten sensitivity or intolerance) or diabetes, chances are that, yes, that little cookie will hurt you. There is not a lot worse than when you are out at a fine dining establishment with a friend who claims to be gluten intolerant. When it comes time to order, the friend orders the house-made cannoli, with a side glance at you who have Celiac Disease and a cocky, “It’s too bad you can’t have it. It’s delicious. At least I can take a pill afterward.” We will discuss survival techniques in later posts — and … No. Murder or physical retaliation is not an option.

When I was told that I had to quit gluten, I was game because I was so sick. I was willing to try anything, but … 25 years ago, the gluten-free products were disgusting. Yes. More than they are now. Going out was a nightmare. I was still getting sick due to cross-contamination — but I did not know that at the time.
